I'm not sure if this will work, but I thought I'd ask anyway.
I have a long run of Cat5e cable going from my garage to my house and specifically from my Apple Airport router to a second Airport router in the garage so I can get wifi there.. I 'd like to mount an IP security camera in the garage and use the same Cat5 cable. The security camera needs Cat5e cable and goes to an NVR that uses POE in my house. The NVR and 1st Airport device are inches away from each other in a closet in the house. It there any way I can split one Cat5e Cable to run both the Airport router in the garage and the IP security camera?

Where would this standalone POE go?
Right now my internet wiring goes like this. In from my DSL modem to my Airport router to a Gigabit 4 port switch. Into this switch is my NVR and the Cat 5e going out to another Airport router in my garage. It is this Cat 5e cable I would like to use for my IP camera as well as my second Apple router.

Would this kind of device work to "split" the Cat 5e cable and enable me to run the Airport wifi router and one of your 2 mp cameras?

That POE you listed is only good for one device. you need to connect 3 devices technically. The cam, the airport and router.
Setup in garage would be POE switch with camera and airport connected to switch( for wifi outhere). The cable you ran out there for internet originally will go to gigbit port on POE switch.
